Quinoa Black Bean Salad
1 cup quinoa, washed and drained
1 ½ cups cherry tomatoes, cut in half
2 cups water
5 green onions, finely chopped
¼ cup olive oil
¼ cup fresh cilantro, chopped
¼ cup lime juicesalt and pepper, to taste
1 tsp cumin
1 can corn, drained
½ tsp red pepper flakes
½ cup toasted pumpkin seeds (optional)
1 can black beans, rinsed and drained or 1 ½ cups cooked black beans made from dried beans
Wash and rinse quinoa. In a saucepan, bring quinoa and water to a boil. Reduce to simmer, cover and cookuntil all water is absorbed, about 10 to 15 minutes. Let cool. In a small bowl, whisk together olive oil, limejuice, cumin, and red pepper flakes. Combine cooled quinoa, beans, tomatoes, corn and onions in a largebowl. Drizzle dressing over salad and toss in cilantro and pumpkin seeds. Season with salt and pepper.
