Honey Flax Seed Bread

Honey Flax Seed Bread

Submitted by Kathie Funk

Ingredients:

1 ¼ cup warm water

4 tbsp honey

1 tbsp olive oil (I use Rice Bran Oil)

1 tsp salt (I use Real Salt)

1 cup ground flax seed

1 ¼ cups whole wheat flour (I use fine ground whole wheat)

1 ¾ cup high gluten flour

2 ¼ tsp Active Dry Yeast

Directions:

I use my Kitchen Aid mixer for this recipe. Put everything in the mixing bowl in the order given. Mix with a dough hook for at least 6 minutes.

Put in a greased bowl and cover with a towel or greased plastic wrap to raise for 1 hour to 1 ½ hours until doubled in size. Punch dough down, dump out and shape into a loaf, make sure all air bubbles are removed, put in a greased 9 X 5 bread pan. Brush the loaf with beaten egg and sprinkle with oatmeal.

Let rise until at least 1 inch above pan. Bake at 375 for 30-35 minutes. If the loaf starts to get too dark, cover with foil for the last 15 minutes. When done, cool on wire rack for 30 minutes before you slice it.
