Banana Macadamia Nut Bread

Ingredients:

        3 banana, mashed

        2 eggs

        1 cup chopped macadamia nuts

        2 tbsp yeast

        ½ tbsp salt

        ¼ cup gluten

        ¼ cup olive oil

        ¼ cup honey

        2 ½ cups warm water

        6 – 8 cups flour 

Combine 2 cups flour and all other ingredients except the nuts in mixer. Mix with dough hook on low speed. Mix well scraping the sides of the bowl. Gradually add additional flour until the dough just starts to pull from the side of the bowl. 

Knead with the mixer on medium speed for 8 minutes. Add nuts and mix just until combined.  

Remove dough from bowl and place on greased counter. Divide into 3 loaves and place in greased pans. Let rise until just to the top of your pan. 

Bake at 350 degrees for 30 minutes.  

Remove bread immediately from pan and cool on rack.
