7 Grain Whole Wheat Bread

Ingredients:

4 ½ teaspoons yeast

2 ½ cups warm water

¼ cup honey

¼ cup canola oil

2 teaspoons salt

4 cups unbleached white bread flour

2 cups coarse whole wheat flour

2 tablespoons gluten

¼ cup heaping 7 grain cereal 

Directions:

Dissolve yeast in water. Stir in honey. Add oil and salt. Stir in 2 cups white flour and 2 cups whole wheat flour. Mix well. Add the other 2 cups of white flour, the gluten, and the 7 grain cereal. 

Mix and knead. At this point, a little more white flour may be needed to get the right consistency. Cover and let rise in a warm place for 50-60 minutes.

Punch down, knead a little and place in bread pans sprayed with PAM.  Let rise, covered, for 45 minutes.

Bake at 350 degrees for 30 - 35 minutes.
